Patrick is Chef/Patron of The Terrace In The Fields, a unique modern structure in the middle of Lincoln's Inn Fields. Having been brought up eating British and Jamaican food, he naturally draws on both traditions, as well as his classic French training working for chefs such as Marco Pierre White. Patrick has cooked at The Ivy, Mirabelle, Titanic, The Criterion and Green's Oyster Bar, where he was head chef, before opening The Terrace where guests can enjoy traditional dishes alongside those with a Caribbean twist.
Before opening his restaurant Patrick was a presenter on several cooking shows, and authored The Caribbean take-out food to Selfridges and to explore opening a second restaurant.
Patrick believes Caribbean food is one of the great cusines of the world, with its fascinating mix of influences - everything from Chinese and Indian to French and Portuguese - and thinks it's time the UK learns more about the incredible variety of Caribbean cooking, from the subtle and aromatic to the gutsy and intense.
